The kitchen began in 2004 in Dublin, cooking for weddings on Saturdays and small corporate lunches during the week. There was no plan for it to become anything larger. There was only a stubborn belief that food, at events, is almost always the missed opportunity, and that fixing it was a matter of discipline rather than talent.
The discipline came first. Sourcing agreements with fishermen we knew by name. Menus written in a small book, tasted three times, and never sent to a client until they were right. A team small enough that everybody knew everybody's job. Twenty years later, the book is thicker and the team is larger, but the working method has not changed.

What did change was the geography. A repeat client asked us to travel to Milan for a launch, then Paris for another, then Amsterdam for a conference. We built a way of working that lets us bring our own standards to a room in a city we've never been to, on a day we've never worked. That is now most of what we do.
We work with brands, agencies and companies who cannot afford for the catering to be the thing people remember for the wrong reasons. It never is.

We are based in Dublin and travel with our own team, equipment and standards. Roughly two thirds of our work now takes place outside the country.
